Red's Yoghurt Muffins

    My daughter & I make these at the weekend as a treat. They are so moist & delicious you'll make them again and again. The great thing is you use the yoghurt carton for all your measuring so less washing up! ENJOY!

    Serves: 12 

    • 1 carton of yoghurt (we use Muller toffee)
    • 3/4 carton of vegetable oil
    • 1 carton of caster sugar
    • 3 cartons of self raising flour
    • 2 eggs (3 if small)
    • 1 bag of white chocolate chips

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat the oven to 180 C or gas mark 5. Lightly grease a bun or muffin tin.
    2. Empty the yoghurt into a mixing bowl. Measure & add the oil. Wash dry the yoghurt carton & add sugar. Add 3 cartons of flour. Add the eggs. Add the chocolate chips and stir well.
    3. Spoon the mixture into the muffin tin, 3/4 full.
    4. Bake for 20 minutes or until the tops are browned.


    ALL measures should not be heaped just level in the carton.

    i've made these twice now, using hazelnut yoghurt, hazelnuts, and hazelnut flavoured chocolate the first time, and petit-filous yoghurt and white chocolate the second. they were nicer the second time extremely easy to make, i made them in my practical cookery exam and did really well - thanks a lot for the recipe!  -  17 Mar 2010

    Loved this recipe, I used forest fruits yoghurt and put banana chunks in, they went down a treat! Will defo be making them again, loved the fact I didn't need to use the scales too. Many thanks  -  21 Jul 2013
