Meatballs in a spicy tomato sauce

    A tasty and filling dish that can be served with pasta or rice. This dish can also be adapted to the slow cooker 6 to 8 hours on low.

    Serves: 4 

    • 500g minced beef
    • 200g sausage meat
    • 1 egg
    • 100g breadcrumbs
    • 5 cloves garlic, crushed
    • handful of fresh basil, chopped
    • 1 tsp chilli powder
    • 1 onion, finely chopped
    • 1 green pepper, finely chopped
    • salt & pepper
    • 2 cans chopped tomatoes
    • splash olive oil
    • small glass red wine
    • pasta or rice to serve

    1. In a blender/food processor add tomatoes, 1/2 the basil, salt & pepper.
    2. In a clean bowl mix together minced beef, sausage meat, breadcrumbs, egg, onion, pepper, remainder of basil, 2 garlic cloves, salt & pepper.
    3. Once evenly mixed take a heap of mixture on a tbsp and roll into a ball; continue this with the rest of mixture.
    4. Heat olive oil in shallow pan add the meatballs and brown. Once browned place in ovenproof dish with lid.
    5. Pour blended tomatoes over meatballs and add rest of basil, garlic, chilli powder and red wine. Place in oven at 180 C / Gas 4 for 1 hour and 30 mins. Serve on a bed of fresh pasta or rice.
