Claire's Chocolate Chip Cookies

    My lil choc chip cookie recipe... They have been a huge hit with everyone who has tried them so far...

    Serves: 12 

    • 75g demerara sugar
    • 75g Utterly Butterly margarine
    • 1 egg
    • 150g self-raising flour
    • 200g Cadbury's chocolate, chopped into very small bits
    • a few drops of vanilla extract
    • pinch of salt

    Prep:30min  ›  Cook:20min  ›  Ready in:50min 

    1. Preheat oven to 180 C / Gas 4.
    2. Cream the margarine and sugar using a wooden spoon. Beat in the egg and vanilla, with a whisk, until light and smooth (frothy). Add flour, salt and chocolate to mixture, then stir in using wooden spoon.
    3. Grease 2 'baking trays', using margarine. Place mixture on trays, in small spoonfulls, making sure there is at least 2cm space around each.
    4. Bake in oven for 15 mins. Turn oven up to 220 C / Gas Mark 7 and bake for a further 5 mins. Your cookies should now be nicely browned. Take from the oven and leave to cool. Once cooled carefully lift from trays using a metal spatula.

    Cook's tip

    Don't forget to check on the cookies after 7 1/2 mins. They may need to be swapped on shelves (1 tray moved up, the other down). Then again 2 1/2 mins after turned gas mark up.

    Altered ingredient amounts. I added extra raisins as well as the choccy chips and I used caster sugar (just because I didn't have any demerara in!)  -  12 Mar 2010


    Not sure about this recipe,had to make quite a few changes ,stork instead of butterly,half chopped nuts and half choc,plus use plain flour or they look like cakes. Only makes 9 decent sized cookies,would definately make extra next time as my kids like their cookies big! If use the recipe again,soft brown sugar would give a nicer looking,softer cookie.  -  03 Dec 2011


    This is a very good recipe!!! I just used butter instead of margarine (because i did not have!!!) Otherwise very good and nothing to change......  -  22 Apr 2012
