Caramel cream icing

    This creamy icing takes some time, but has a truly caramel flavour. Try it with my Christmas mincemeat cake recipe (see link in footnote)!

    Serves: 12 

    • 2 tablespoons caster sugar
    • 200g caster sugar
    • 125g butter
    • 125ml whipping cream

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Place 2 tablespoons sugar in a saucepan. Cook over medium heat until sugar is dissolved and becomes golden brown in colour, but do not stir. Set aside.
    2. Combine remaining sugar, butter and cream in a medium saucepan. Cook over medium heat, stirring constantly, until mixture comes to the boil. Stir in caramelised sugar, and return to the boil. Cook for 2 minutes, stirring constantly. Remove from heat. Beat until icing has a good spreading consistency.

    This recipe was a little hard to follow and you really shouldn't set melted sugar "aside," as it will solidify inside whatever you put it in. The frosting however tasted awesome, I would just suggest that you melt the sugar while you're making the second mixture, and add it in as soon as the sugar dissolves.  -  09 Sep 2005  (Review from Allrecipes US | Canada)


    This frosting is incredibly delicious! It really has a TRUE caramel flavor. It was time consuming, and a little tricky to get to the right consistancy, due to my substituting half and half instead of the heavy cream. If you do that, allow for extra boil time to reduce the moisture level. This frosting has the texture of a thick glaze, so bear this in mind when spreading it.
