Bacon turnip mash

    A delicious combo of my two favourite foods!

    Serves: 4 

    • 1 kg (2 1/4 lb) turnips, peeled and cubed
    • 2 tablespoons butter
    • salt and freshly ground black pepper to taste
    • 1 tablespoon minced garlic
    • 225g (8 oz) bacon - cooked and diced
    • 1 to 2 tablespoons bacon dripping

    1. Cook turnips in a pot of salted water until very tender.
    2. Meanwhile, in a frying pan, fry the bacon until nice and crispy. Remove from the frying pan, dice and set aside. Reserve dripping.
    3. Drain turnips, then mash with butter, salt, pepper and garlic. Add 1 to 2 tablespoons of bacon dripping and bacon. Stir and heat through before serving.

    For a Burns Supper...

    Transform this dish into a Burns Supper centrepiece by using 500g swede and 500g floury potatoes instead of the 1kg turnips.
