Gnocchi Primavera with Parmesan Cream Sauce

I was eager to concoct a suitable meal for guests on my student budget by utilizing ingredients already in my apartment. With one vegetarian on our guest list, I aimed for veggie-friendly, economical yet still rich and satisfying. I served this with sun-dried tomato bread and not a morsel remained--very filling AND loaded with vitamins!

Super super tasty dish. Will become part of my fav recipes collection. I don't think I would change anything about it to be honest but if I do I will post the changes....

Great recipe but unfortunately Parmesan cheese isn't veggie, it uses calf rennet! I substituted a similar style cheese instead, worked just as well

Heavenly! A really tasty dish, which will be very useful later in the year when peppers, courgettes and tomatoes come into season.

Altered ingredient amounts. My sauce thickened up because it was made ahead and refrigerated over night. If you are serving immediately, you may want to add milk slowly and you may find that you need more or less in order to achieve the desired thickness. White wine will also thin the sauce.
