Pork loin chops with cider and tarragon

    This is one of those accidental recipes. I was supposed to making something else and it evolved into this! Its delicious and easy. Serve with spuds of any kind or pasta.

    Serves: 4 

    • 4 pork loin chops
    • 1 medium onion
    • 1 tablespoon honey (or maple syrup)
    • 1 1/2 cans dry cider
    • 5 mushrooms, sliced (optional)
    • 2 teaspoons dried tarragon
    • a little butter
    • small tub creme fraiche

    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. In a deep pan, large enough to allow all chops to lay flat: Brown chops and onions. Add cider, honey and tarragon and simmer for 20 mins (cider needs to reduce but not boil dry).
    2. Meanwhile cook sliced mushrooms in a little melted butter until golden.
    3. When chops have had 20 mins, transfer chops from pan to serving plates.
    4. Add the mushrooms and creme fraiche to the cooking juices stiring well. When well mixed pour over chops.

    This recipe had a little too much contrast and sweetness for my guests. I recommend checking the cider is sufficiently dry and adding the honey a little at a time, to taste.  -  07 Jul 2010


    this was a lovely idea for pork, with so few ingredients, but was far too sweet, cider and honey as a reduction is only for the very sweet toothed.. But thank you, as my girls will love it (16 and 17)...don't stop the good work, as your recipes are so easy x  -  03 Mar 2012
