    About this recipe: King prawns can get rubbery when cooked. Grilling them on the barbecue is an excellent alternative. The bacon keeps them from drying out.

    Ingredients
    Serves: 2 

    • 20 large prawns, peeled and cleaned
    • 10 slices streaky bacon, cut in half

    Method
    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Preheat barbecue for medium heat.
    2. Wrap prawns in bacon, and secure with cocktail sticks.
    3. Arrange prawns on lightly oiled cooking grate. Cook for 3 to 4 minutes, turning once. The prawns will be done when the bacon is fully cooked.

    I've been BBQing this for years and I would strongly recommend using smoked streaky bacon. The flavour combination is fantastic and the fattier bacon keeps the prawns really moist.Cook until the fat has melted away. Take the time to shell big prawns, remove the waste track and leave the small tail on,as it improves hygene and the presentation. Serve with a dip of sweet chilli sauce....... ENJOY - 19 Aug 2011
