Christmas savoury roulade

    Not just for Christmas! This is a great recipe that I was shown how to make, it uses the "All trimmings" from a Christmas dinner to make a great roulade, either serve it into portions for a main course on its own or cut it into smaller portions to have at the side with your turkey! It is basically layered bacon, suasage meat and stuffing rolled into a log and baked for 40 mins really simple. the flavours of the bacon and sausage infuse with the stuffing, really yummy!

    Serves: 4 

    • 1 pack of unsmoked bacon
    • 1 pack of pork sausages
    • 1 pack of stuffing mix

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Roll out some cling film on the work surface.
    2. Place the bacon on the cling film and overlap the edges of each rasher so there are no gaps to form a rectangle.
    3. Squeeze the sausage meat out of the sausages (or just buy sausage meat) and spread the sausage meat over the bacon.
    4. Make up the stuffing mix (tip add some butter to stuffing mix). Spread the stuffing over the sausage meat.
    5. Now roll the roulade into a log using the cling film to keep it all together. Place on a lightly oiled baking dish, remove cling film and bake in the oven for 30-40 mins.
    6. Remove from the oven and slice into portions; this serves a meal for two with roast potatoes and veg (ie cut in half) or trimmings for a turkey dinner portion cut into 4-6.

    Very easy to make. Rolled up surprisingly easily and looked fab at that point - a really substantial looking dish. The bacon rashers stuck together without a problem. My only issue was that it was difficult to slice as tended to collapse, and therefore I didn't really like to put it on the table as it didn't look its best. It was absolutely delicious though and so easy. I will definitely be making it again, and hopefully next time it may look better. I did home-made sage & onion stuffing - so easy, try it if you haven't already done so - maybe I put too much in 'cos it was so nice! Xmas 2016 update: made this dish again but used shop-bought stuffing - not as tasty as the stuffing was the dominant flavour. It was however easier to slice than when I made it last Christmas.  -  28 May 2016
