Red Cabbage

About this recipe: A sweet and sour side dish that's really nice with roast meats or sausage. Tastes better after day two, and freezes well.

Serves: 6 

  • 180ml water
  • 1 small red cabbage, finely shredded
  • 3 apples - peeled, cored and chopped
  • 4 tablespoons brown soft sugar
  • 250ml vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 2 tablespoons butter, divided

  1. Place water in a large saucepan, and stir in cabbage, apples, brown sugar, vinegar, cinnamon, allspice, cloves and 1 tablespoon butter. Bring to the boil. Reduce heat, and cover. Simmer 45 minutes, stirring occasionally, until cabbage is tender. Stir in remaining butter before serving.

I reduced the vinegar to 150ml and added a handful of raisins and it was really good. My husband loved it and it's very tasty cold as a pickle. Would probably add a bit more spice next time. There will definitely be a next time though. - 16 Oct 2012
