    This is my go-to Christmas cake icing recipe that I use for my Christmas cake every Christmas.

    Serves: 12 

    • 2 large egg whites
    • 1 dessertspoon fresh lemon juice
    • 325g icing sugar, sieved

    1. With an electric mixer, beat the egg whites with the lemon juice. Add the sieved icing sugar and beat on low speed until smooth. Use to ice your Christmas cake immediately, or store in an airtight container in the fridge.

    My first time icing a cake, I found I had to add more icing sugar as it was too runny. It was still a bit runny but I poured it onto the cake and it just levelled out all by itself I smoothed the sides and it looked pretty good. I did want to do a bit of a snow scene with the icing but this recipe was too runny. I could make a smaller batch with more icing sugar once this has dried, but I don't think i'll bother it looks good.  -  17 Dec 2014  (Review from Allrecipes AU | NZ)
