Herbie pie

    When I tell people about 'herbie pie' they're like, "WHAT?!". It does sound funny, but it tastes delicious and is cheap to make too! I think a lot of people will be curious about this dish with its strange name! I have made it for friends and family and they really liked it, in fact a friend even asked me for the recipe!

    Serves: 4 

    • 340g (12 oz) sausagemeat
    • mixed herbs to taste
    • 50g (2 oz) bacon, chopped
    • 1 onion, chopped
    • salt and pepper to taste
    • 170g (6 oz) mature Cheddar cheese
    • 450g (1 lb) potatoes, mashed

    Prep:30min  ›  Cook:1hr  ›  Ready in:1hr30min 

    1. Place the sausagemeat into the base of an ovenproof dish, then sprinkle with mixed herbs.
    2. Fry bacon and onion until soft and place over the sausagemeat; season to taste.
    3. Mix the grated cheese with the potato. Pipe or spread this over the top and bake in a moderate oven (180 C / Gas 4) for 1 hour.

    I printed off this recipe in early January and only started using it a couple of months ago. It is unexpectedly yummy and has rapidly become a firm family favourite. I would definitely recommend this!  -  03 May 2011
