About this recipe: Roast goose is a favourite at Christmas and this recipe for roast goose with apple sultana stuffing will be a wonderful choice for your Christmas meal. Enjoy with all of the usual side dishes and don't forget to allow extras for sandwiches on Boxing Day.

Serves: 8 

  • 1 whole goose, 4 to 5 kg
  • 3 sticks celery, chopped
  • 3 onions, chopped
  • 2 tablespoons butter
  • 500g chopped, peeled apples
  • 275g sultanas
  • 275g cubed day-old white bread
  • 1 teaspoon salt
  • 2 eggs
  • 125ml apple juice
  • 125ml water

  1. Sprinkle the inside of the goose with salt. Prick skin well; set aside.
  2. In a frying pan, saute the celery and onion in butter; transfer to a large bowl. Add the apples, sultanas, bread and salt.
  3. In a small bowl, beat eggs, apple juice and water. Pour over bread mixture and toss lightly. Stuff into the goose. Place with breast side up on a rack in a large roasting tin.
  4. Roast uncovered at 180 C / Gas 4 for 3 to 3-1/2 hours or until a meat thermometer reads 85 degrees C. To let the juices redistribute, cover goose with foil and let stand for 20 minutes before carving.
