Tuna Loaf

    One of my all time faves! Something my mum used to make for me and I make for my kids, great change from meatloaf and good for packed lunches, picnics and quick dinners! Really good with Jacket potatoes and salad or veg.

    Serves: 6 

    • 1 can tuna, drained and mashed
    • 2 eggs or 3 whites
    • 100g breadcrumbs
    • 1 medium onion, grated
    • 1 medium carrot, grated
    • 100g butter, melted
    • dash of salt and pepper
    • garlic granules

    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Preheat oven to around 180 C / Gas 4.
    2. Combine all dry ingredients and mix well. Beat eggs or whites and slowly combine, then gradually add butter.
    3. Grease a loaf tin and place in hot oven for around 45 mins, or untill knife comes out clean from centre (I tend to check after 30 mins with fan oven!).

    Fantastic taste! I didnt have any carrots...and I added some shredded mature cheddar (just because cheese makes everything better!!). My only complaint is that there wasnt enough. Will make a double batch next time  -  28 Aug 2012
