    About this recipe: A creamy chocolate mousse flavoured with Irish cream. I really didn't know I could make something so good! I have also substituted dry gin for the Irish cream with delicious results.

    Ingredients
    Serves: 4 

    • 110g plain chocolate, chopped
    • 3 eggs, separated
    • 1 tablespoon Irish cream liqueur
    • 125ml whipping cream, whipped to stiff peaks
    • chocolate shavings

    Method
    Prep:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Melt the chocolate in a small saucepan over low heat. Remove from heat and allow to cool. In a bowl, beat the egg yolks and stir in the melted chocolate and Irish cream. Fold in 1/2 of the whipped cream.
    2. In a separate bowl, beat the egg whites until stiff. Fold the egg whites into the chocolate mixture. Pour the chocolate mousse into serving glasses and garnish with remaining whipped cream and chocolate shavings before serving.

    This was easy to make & quite chocolatey!! Using plain choc made it a bit bitter for my taste, so next time I'll use milk choc. - 15 Dec 2009
