Sausage-stuffed Chicken Breasts

This is a lovely dish, very unusal and tasty. Also very impressive if having guests for dinner!

Ingredients

  • 4 sausages, pork are best
  • 4 spring onions, chopped
  • pinch dried sage
  • 4 chicken breasts
  • 4 rashers streaky bacon
  • 1 tsp oil

Preparation method

  1.   Preheat the oven to 200 C / gas 6.
  2.   Squeeze the sausage meat out of the skins and mix with the spring onions and sage. Season to taste with salt and pepper.
  3.   Cut each chicken breast almost in half and open out like a book.
  4.   Stuff the sausagemeat inside, close up and wrap each one in a rasher of streaky bacon.
  5.   Place in a roasting tin and drizzle with 1 tsp oil.
  6.   Cook for 25 mins, and serve with crispy potatoes, veg and gravy.
