This is a lovely dish, very unusal and tasty. Also very impressive if having guests for dinner!
Ingredients

4 sausages, pork are best

4 spring onions, chopped

pinch dried sage

4 chicken breasts
-
4 rashers streaky bacon

1 tsp oil
Preparation method
- Preheat the oven to 200 C / gas 6.
- Squeeze the sausage meat out of the skins and mix with the spring onions and sage. Season to taste with salt and pepper.
- Cut each chicken breast almost in half and open out like a book.
- Stuff the sausagemeat inside, close up and wrap each one in a rasher of streaky bacon.
- Place in a roasting tin and drizzle with 1 tsp oil.
- Cook for 25 mins, and serve with crispy potatoes, veg and gravy.
