About this recipe:I absolutely love frittatas; so much easier than quiche, and healthier, too. This is a very simple frittata with only three ingredients besides the egg. The flavours are bold, so you don't need to embellish it with much of anything - but do experiment and add some chopped fresh herbs if desired.
2 potatoes, cooked and peeled, then chopped into 1 to 2cm pieces
salt and pepper to taste
1 (105g) tin wild red salmon, drained and flaked into large-ish pieces
4 large eggs, beaten
75g feta, crumbled

In a small ovenproof fying pan (cast iron is great) over medium high heat, heat about 1 tablespoon of olive oil. Once hot, add the potatoes and pan fry for about a minute on each side, till the potatoes are slightly crispy. Season with salt and pepper to taste.
Preheat the grill.
Beat the eggs in a mixing bowl and then add the salmon pieces. Once potatoes have reached desired crispiness, add egg and salmon. Don't stir, but ensure the egg, potato and salmon are evenly distributed in the pan. Reduce heat to medium and cook, without disturbing, for 3 to 5 minutes or until the bottom of the frittata is set.
Sprinkle the crumbled feta on top of the frittata, then transfer the pan to the grill, about 10cm from the heat source. Grill for about 5 minutes, until middle is set and the feta starts to brown just a bit. Delicious served with a green salad for a special lunch or a midweek supper.
