Sweet chilli chicken or pork

    Great for using up leftover chicken or pork, and vegetables that are looking lost at the bottom of the fridge. Adjust the amounts according to taste!!

    Serves: 2 

    • 1 onion, chopped
    • 1/2 red pepper, chopped
    • 2 chicken breasts, or pork, chopped
    • 2 handfuls of peas
    • 100g (uncooked weight) cooked rice/cooked noodles
    • 1 tablespoons light soy sauce
    • 2 tablespoons sweet chilli sauce

    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Fry onion and red pepper in a little oil until soft.
    2. Add chopped chicken/pork, peas and cooked rice/noodles, mix together and heat though. Add salt and pepper to taste.
    3. Put in a good couple of shakes of soy sauce and sweet chilli sauce (according to your taste) mix well.
    4. Eat!

    Something else. I left out the pea's!Don't like them in dishes like this!Still very tasty though.I also used a whole red pepper instead of just half!  -  11 May 2010
