Shaker Lemon Pie

    • Filling.
    • 1 lb Sugar
    • 4 Unwaxed lemons
    • 2 oz Flour
    • 2 eggs
    • Pastry
    • 8 oz SR Flour
    • 4 oz Butter
    • 2 oz Sugar

    1. Preheat oven to gas mark 6, also preheat a baking tray.
    2. Make your pastry the usual way, by rubbing in the butter, sugar and flour. Wrap in cling film and leave in the fridge for 30 mins.
    3. Put the zest of 2 lemons in the bowl add the segments of all four lemons, add the flour and sugar and 2 lightly beaten eggs.
    4. Line you tin with the pastry, pour in the filling and place more pastry on top.
    5. Place pie on the preheated baking tray and bake for 30 mins, turn oven down to gas mark 4 and cook for a further 30 mins, you may need to cover pie with foil if starting to get too brown.
    6. Leave to cool before serving.
