Easy peasy cream of courgette and potato soup

    This soup my mother in law makes, and it's lovely for those winter days to eat with a warm crusty roll...so simple and sooo cheap!!! It also makes a great starter for any nice dinner u make at home, just add a bit of Stilton for that tasty kick if you fancy being a bit ''posh'' at xmas :)

    Serves: 4 

    • 6 courgettes
    • 2 medium potatoes
    • double cream
    • salt and pepper
    • water
    • stilton cheese (optional)

    Prep:5min  ›  Cook:45min  ›  Ready in:50min 

    1. Peel and slice the courgettes and potatoes. Put them in a pan with water til it covers the veggies. Let it boil til all veggies turn mushy..make sure u prick them see if they need more time.
    2. Remove half of the water and pass through a blender. Return to the saucepan and add the double cream. Salt and pepper at the end. Enjoy!!!
