Mango mint lassi

    It's a great take on the famous Mango Lassi that you tend to see at various Indian restaurants because it takes the flavour to a higher and much more complex level.

    Serves: 3 

    • 1 large mango - peeled, stone removed and diced
    • 3 tablespoons brown soft sugar
    • 2 tablespoons chopped fresh mint
    • 1 teaspoon freshly ground star anise
    • 1 teaspoon freshly ground cardamom
    • 1 tablespoon lime juice
    • 400g natural yoghurt
    • 3 sprigs fresh mint for garnish

    1. Blend the mango, brown sugar, chopped mint, star anise, cardamom, lime juice and yoghurt in a blender on high speed until smooth. Pour into glasses and garnish with fresh mint sprigs to serve.

    I adored this, I like my drinks to be on the tart side so I omitted the sugar completely and I also used frozen mango. I will make this frequently, I may even freeze some garden mint to make this over the winter.  -  13 Aug 2010  (Review from Allrecipes US | Canada)


    WOW-great flavor and so refreshing. Just a few minor changes I made were using vanilla yogurt, therefore needed less brown sugar and I found some chocolate mint at a Farmer's market which tastes great in this drink. Have been looking for various ways to use up the ground star anise and this is perfect. More stars from us on this one! Curious to taste with a spicy Indian meal too.
