Easy homemade tomato sauce

    Wash, peel and de-seed the tomatoes - I found using a regular peeler did not work too well, I used a perforated edged knife to peel and de-seed.

    Serves: 4 

    • 10 tomatoes, peeled, seeded and roughly chopped
    • 1 garlic clove, chopped
    • 1 medium onion, finely chopped
    • 1 tablespoon garlic flavoured olive oil
    • salt and pepper

    1. Heat the olive oil over a moderate heat. Add the onion and garlic, simmer for 5-10 minutes OR until golden in colour - stir occasionally. Season with salt and pepper to taste.
    2. Add the tomatoes - stir a little, pop the lid onto the saucepan and leave for 20 minutes. Sauce should now be thickish.
    3. Pour into a food processor and blend for 5 minutes or until thick in texture. Leave to cool and pop into the fridge. Use as and when needed.

    Just a tip: the easiest way to peel tomatoes is to score lines from the stem to the bottom and then plunge the tomato into boiling water for about 60 seconds. The skin should then peel off easily.  -  20 Jun 2013
