Angel's baked chicken and rice

I found this recipe whilst looking for inexpensive meals to cook for the family....great hit and costs about a fiver to feed a family of four!!

Ingredients

4 medium sized chicken thigh portions
1 can of condensed cream of chicken soup
1 packet of French onion soup
350g of parboiled long grain rice
750ml of water

Preparation method

1. Spread the rice evenly on the bottom of a medium baking dish. Place the chicken portions on top of the rice. If you are using a square dish place one in each corner.
2. Mix together the condensed soup and water and pour over the top.
3. Sprinkle the contents of the dry onion soup over the entire dish. Cover with foil and bake for about 1 hour and 15 mins.

    I use 3 chicken breast with a purple onion, broccoli and a red pepper. I used light condensed mushroom soup.
