Sure, you can buy it in any shop, but there's something special about making your own garam masala. Use in all your favourite curries and Indian recipes.
Crush nutmeg into small pieces (you can use a knife, but carefully). Toss with the remaining ingredients, and scatter on a swiss roll tin. Place in the oven and cook for 5 to 10 minutes, until fragrant (watch carefully so it doesn't burn). Remove from the oven and let cool.
Place all of the spices in a food processor or spice grinder and grind to a fine powder. Store in an airtight container.
