    About this recipe: Sure, you can buy it in any shop, but there's something special about making your own garam masala. Use in all your favourite curries and Indian recipes.

    • 1 whole nutmeg
    • 1 tsp whole black peppercorns
    • 2 cardamom pods
    • 1 tsp whole cloves
    • 1/2 tsp mace
    • 1 (5cm) piece cinnamon
    • 10 bay leaves

    1. Preheat the oven to 230 C / Gas 8.
    2. Crush nutmeg into small pieces (you can use a knife, but carefully). Toss with the remaining ingredients, and scatter on a swiss roll tin. Place in the oven and cook for 5 to 10 minutes, until fragrant (watch carefully so it doesn't burn). Remove from the oven and let cool.
    3. Place all of the spices in a food processor or spice grinder and grind to a fine powder. Store in an airtight container.
