Baked Sweet Potatoes

    Healthy and tasty sweet potatoes make a great addition to any meal. Very easy!

    Serves: 4 

    • 3 large sweet potatoes
    • 2 to 3 tablespoons olive oil
    • 2 pinches dried oregano
    • salt and freshly ground black pepper to taste

    1. Preheat oven to 180 C / Gas mark 4.
    2. Wash and peel the sweet potatoes. Cut into medium size pieces. Place the cut sweet potatoes and olive oil in a glass or non-stick baking dish, and toss to coat. Sprinkle with oregano, salt and pepper (to taste).
    3. Bake in preheated oven for 60 minutes or until soft.

    This makes a nice side dish. The addition of oregano was a nice change from the usual way I serve sweet potatoes.  -  13 Mar 2012


    Used different ingredients. Absolutely love these as does my 7 yr old son!! We have tweaked by changing the herbs - we have used Thyme instead of oregano (delicious with Chicken) and rosemary and garlic (scrummy with lamb) - Very very versatile and if left long enough to go slightly crispy very delicious.. I agree with Ruth do not turn them!  -  30 Jul 2009


    Altered ingredient amounts. After following the directions, I thought there was too much oregano taste. So I tried it again by bumping up the salt & pepper to 1 teaspoon each and the oregano to 1/2 a teaspoon. I dump everything into a large bowl and mix it all by hand to get the potatoes well coated, then bake as directed. I do not turn them over. YUM. Now it is one of my favourites.  -  15 Sep 2008
