Port-soaked apricots with smoked bacon

Port-soaked apricots with smoked bacon

About this recipe: We found this a lovely alternative to the sausage option and the port makes it really special! It is best to marinate the apricots in the port over night for the best flavour. Can be prepared up to two days in advance and chilled once apricots are rolled in bacon. We also served just the apricots in port at the table for our vegetarian friends.
