Port-soaked apricots with smoked bacon

    We found this a lovely alternative to the sausage option and the port makes it really special! It is best to marinate the apricots in the port over night for the best flavour. Can be prepared up to two days in advance and chilled once apricots are rolled in bacon. We also served just the apricots in port at the table for our vegetarian friends.

    Serves: 8 

    • 24 dried apricots
    • 150ml port
    • 12 rashers of smoked bacon
    • a little oil for brushing

    1. Put the apricots in a bowl with the port and soak overnight in lidded container.
    2. Halve the bacon rashers lengthways. Place apricot at one end of bacon rasher and roll up. Place in lightly greased oven dish.
    3. Brush with a little oil and cook at 200 C / Gas 6 for 20 minutes or until golden.
