About this recipe: This is the first recipe I've made by myself, usually I use a recipe but didn't have access to the internet. I cooked this with chunks of chicken but plan on cooking it to have with scallops so this recipe is just for the salsa. It would also go great with some pasta though. If anyone has any advice or tips for me then they would be greatly appreciated as I am a beginner cook. Thanks and enjoy :)

Serves: 2 

  • 2 tbsp olive oil
  • 1 small onion sliced
  • 1 garlic clove chopped
  • 2 tbsp sun riped tomato paste
  • About 10 cherry tomatoes (more or less if you wish)
  • 1 can of chopped tomatoes (400g)
  • Splash of worchester sauce or to taste
  • Pinch of thyme
  • Pinch of cayenne pepper
  • 1 tsp hot pepper sauce
  • 1 Knorr jelly chicken stock
  • Salt & pepper to taste

Prep:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Heat the oil in a large frying pan on med-high heat. Add the onions and fry them until they are soft but not brown. Add the tomato paste and stir until they are evenly covered.
  2. If you decide to use meat like I did then you can fry it now.
  3. Turn down the heat and throw in the cherry tomatoes and garlic. Cook them for about 3 mins and then season.
  4. Add the chopped tomatoes, Worcester sauce and thyme (you can drop the thyme and use oregano or even both, it's totally up to you). Simmer for 5 mins.
  5. Add the chicken stock and chop it into small pieces, keep stirring the mixture until it has completely melted.
  6. Add the cayenne pepper and hot pepper sauce and stir. Simmer for 15 mins.
  7. Serve.
