xuthus1972 The easiest banana cake to make, just right for using up those very ripe bananas in the fruit bowl! I make this one in a loaf tin then you can cut slices and butter them for an after school treat.

Serves: 10
  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 2 very ripe bananas, mashed
  • 190g self raising flour
  • 60ml milk

Preparation method

Prep: 10 mins | Cook: 35 mins
1.
Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
2.
Remove from heat and add the mashed bananas, mix well.
3.
Add the egg, mix well.
4.
Stir in the flour and the milk.
5.
Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
6.
Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until a skewer comes out clean. Leave to cool and enjoy!

One of the best banana cakes I have ever made! I used a dash more vanilla extract and added baking powder. I also threw in chopped almonds and walnuts. Delicious!

Great receipe although I had 3 over-ripe bananas which I used and it was delicious! After reading some of the other comments I might try it without milk the next time.

very easy and tasty recipe I baked this for my mum...used 2 quite large bananas, forgot to add the milk, and sprinkled cranberries on the top. It was delicious. I got a thumbs up from everyone that tried it. Very tasty cake and is likely to please any banana lover

Really easy to make, does need a little longer than 35 mins though, mine were nearly 45 mins to an hour but came out great and tasted just the same. Kids love it and even the wife does. Made two already.
