Winter Fruit Salad

    Delicious, spiced flavours in this warming winter fruit salad, which I always make for Christmas day as a light alternative to Christmas Pud! Can be eaten warm or cold.

    Serves: 8 

    • 4 oz demerara sugar
    • 5 cloves
    • 1 cinnamon stick
    • 1lb pears
    • 2 oranges
    • 8oz cranberries
    • 8oz rasberries (fresh or frozen)
    • 1/4 pint red wine

    1. Gently heat the wine, sugar, cinnamon and cloves in a pan.
    2. Add peeled and sliced pears together with orange rind and cranberries.
    3. Bring to the boil then simmer for 20 minutes.
    4. Meanwhile, pare the oranges and put the segments in a serving dish along with the raspberries.
    5. Now pour the mulled wine mixture over the oranges and raspberries. (Remove cloves)
    6. Serve with cream, greek yoghurt or vanilla ice cream.
