500g (1 lb) courgettes (mixture of green and yellow if possible)
75g (3 oz) butter
3 tsp fennel seeds
1 small onion, finely chopped

Cut the courgettes in half lengthways. With a vegetable peeler, shave each halve into long ribbons.
In a wide based non-stick frying pan melt the butter, add the fennel seeds and the onion, then the courgette ribbons. Toss the courgettes in the butter gently until they start to turn translucent. Serve immediately.
