Jock Strap

    This is my families favourite at Christmas , I got the recipe from an old cookbook , the family loved it and gave it its name - no idea why !!!

    Serves: 10 

    • Shortcrust Pastry made with 6oz of flour , 3 oz marg.
    • For The Filling.
    • Apricot Jam - i use rasberry as well
    • 3 Tablespoons of Golden Syrup
    • 3 oz of Marg
    • 6 Tablespoons of Porridge Oats
    • 6 Tablespoons Coconut
    • Few drops of Almond Essence

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Line a swiss roll tin with the pastry, and spread the jam over it.
    2. In a saucepan , warm the syrup and marg until it melts then stir in the porridge oats, coconut & almond essence.
    3. Spread over the jam.
    4. Bake for about 20mins at gas mark 5 or 190 c.
    5. Cut into slices while warm.
