About this recipe:
This is my families favourite at Christmas , I got the recipe from an old cookbook , the family loved it and gave it its name - no idea why !!!
Shortcrust Pastry made with 6oz of flour , 3 oz marg.
For The Filling.
Apricot Jam - i use rasberry as well
3 Tablespoons of Golden Syrup
3 oz of Marg
6 Tablespoons of Porridge Oats
6 Tablespoons Coconut
Few drops of Almond Essence
- Line a swiss roll tin with the pastry, and spread the jam over it.
- In a saucepan , warm the syrup and marg until it melts then stir in the porridge oats, coconut & almond essence.
- Spread over the jam.
- Bake for about 20mins at gas mark 5 or 190 c.
- Cut into slices while warm.
