About this recipe: I always used to run to the kitchen when I was little and my mum was cooking this for tea. Another one of her family's simpler recipes, this makes for a very cheesey treat in winter time, just serve it up with some crusty bread and Bob's your mother's brother! I find it always tastes better with a mild rather than a mature Cheddar. I have also suggested white potatoes, as I prefer their texture in this recipe. But this is also up to your own personal taste (or whatever's in your cupboard!).

Serves: 4 

  • 8 rashers bacon, chopped
  • 1 red onion, diced
  • 400g mild Cheddar cheese, grated
  • 500g white potatoes, thinly sliced

  1. Preheat your oven to 190 C / 170 fan / Gas 5.
  2. Using a shallow ovenproof dish, layer the ingredients in the order listed, using about a quarter of the amount each time, so that you end up with about four layers. Once you've reached the desired amount, pour a little water into the dish, to help the potatoes to soften a little quicker in the oven.
  3. Top the dish off with a little extra grated cheese, and pop in the oven.
  4. Cooking time will vary depending on the size of your dish, but around 1 hour is a good guideline. All ingredients should be cooked and lightly browned, the potatoes will be soft, and the cheese well melted.

Used different ingredients. Try using some good chicken stock instead of the water, it makes a big difference to the flavour. - 23 Feb 2010
