Chocolate Christmas Treats

    This recipe is my own creation. One Christmas , a group of visitor call in unexpectedly. I had to rustle up something quickly for them to eat. I baked a try of chocolate scones using what I have got in the cupboard. It was a great success. The same people keep caming back every Christmas.

    Makes: 8 Scones

    • 175g/ 7oz Self raising flour
    • 25g /1oz cocoa powder
    • 50g/2oz butter butter
    • 50g/2oz chocolate chips
    • 25g/1oz caster sugar
    • 125ml milk
    • 250 ml whipped cream
    • 1 tablespoon Brandy
    • 1 small bowl chopped fresh fruit eg. strawberries or apricots

    1. 1.Sift flour and cocoa into a food mixer. Add in butter. Turn on mixer to rub the butter into the flour till the mixture look like fine bread crumbs.
    2. 2. Add in the chocolate chips and sugar. Add in the milk while the mixer is still on, till the mixture form into a soft dough.
    3. 3.Turn out onto a floured board. Roll out to 2.5 cm thickness. Cut into 8 rounds using a 6 cm biscuit cutter.
    4. 4.Transfer on to a greased baking tray. Bake in a hot oven Gas 8 or 230C for 7 to 10 muinutes. Cool on a wire rack.
    5. 5. Whip the cream in a ood mixer. Stir in the brandy. Serve the scones with Brandied cream and chopped fresh fruit.
