Hearty turkey vegetable stew

    Turkey breast meat and fresh vegetables are cooked up into a healthy, warming and hearty turkey stew that may be enjoyed any time of year.

    Serves: 4 

    • 2 tablespoons butter
    • 2 onions, chopped
    • 1 stick celery, cut into 2cm pieces
    • 2 carrots, peeled and cut into 2cm pieces
    • 2 potatoes, peeled and cubed
    • 3 tablespoons plain flour
    • 750ml chicken stock
    • 1/4 teaspoon dried marjoram
    • 2 skinless, boneless turkey breast halves, cubed
    • 1 green pepper, diced

    1. Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season with marjoram. Place turkey in the pot, and bring to the boil. Reduce heat to low, cover, and simmer 30 minutes.
    2. Mix the green pepper into the stew, and continue cooking 10 minutes, until pepper is tender.

    Something else. Put it all in the slow cooker and cooked for 6 hours on low after browning the meat in a pan first. I left out the pepper and added 2 parsnips instead.  -  19 Oct 2010


    Made this for our evening meal, very nice. I put herby dumplings with it. I bought the turkey breast at a cheaper rate, so it was economical as well!  -  11 Jul 2010
