About this recipe: A flavoursome suculent chicken breast stuffed with mushrooms wrapped in bacon in a thick bbq tomato sauce, topped with melted cheese. A family favorite of ours Served with garlic buttery mash not great as part of a calorie controlled diet..... oh well tastes fantastic. Was suprised no similar dish has been posted.

Serves: 2 

  • 2 large Chicken breasts
  • 4 rashers of bacon
  • 100g mushrooms
  • 1 medium sized onion
  • 1 clove of garlic
  • 1/2 can of chopped tomatoes
  • 4 tablespoons of bbq sauce
  • 1 knob of butter
  • 1 tablespoon of oil
  • 1 teaspoon of dried italian herbs
  • 150 g of chedder cheese

Prep:15min  ›  Cook:1hr  ›  Ready in:1hr15min 

  1. Chop the mushrooms into small pieces, slice the onion, crush the garlic. grate the cheese. preheat oven to 190 deg c
  2. slit a pocket in each of the chicken breasts, add a small amount of butter into each breast, add a small amount of garlic to each breast, stuff the pocket with the chopped mushrooms.
  3. Wrap the Chicken in the bacon 2 rashers to each breast, making sure the pocket of the chicken is well wrapped up so nothing falls out.
  4. In a large ovenproof sautee pan, add the oil and heat seal the chicken and bacon, turning frequently so that it does not brown too much. Add the sliced onion in the pan around the chicken breasts.
  5. Add the herbs, chopped tomoatoes into the dish, then add the BBQ sauce/ or paste. stir the sauce and mix the bbq and tomatoes together. Spoon over some of the suace onto each chicken breast.
  6. top the dish with the cheese
  7. Place in the oven for 30 minutes or until chicken breast is cooked, Do not over cook keep the chicken nice and moist.
  8. Cut each breast into 2 pieces revaling the stuffed garlic mushroom centre. place on large plate spoon over some of the tomato bbq sauce. Serve with garlic mash and green beans.


You will need to use a large sautee pan with a metal handle as the dish needs to go in the oven. (plastic handles do not work well)
