Sweetcorn vol au vents

    A friend made these at a dinner party and gave me the recipe. Nice vegetarian vol au vents.

    Makes: 12 

    • 12 5cm/2” Vol-au-Vent cases
    • 50g butter
    • 2 tbsp plain flour
    • 180ml milk
    • 1 tbsp mustard
    • 50g grated Cheddar cheese
    • 75g sweetcorn
    • salt and pepper to taste

    1. Preheat the oven to 180 C / Gas 4.
    2. Melt butter in a small saucepan, add the flour and cook over a medium heat for 1-2 minutes, stirring.
    3. Gradually add the milk stirring constantly and cook over a medium heat until thickened.
    4. Add the mustard, cheese, sweetcorn, salt and pepper and cook for a further 1-2 minutes stirring all the time.
    5. Spoon the mixture into the vol-au-vent cases, place on a baking tray and bake for 8-10 minutes.
