Christmas Eve cake

    This nutty and fruity Christmas cake recipe is a tradition in my family in Brazil on Christmas Eve and it's a big hit!

    Makes: 1 cake

    • 3 eggs, yolks and whites separated
    • 660g sugar
    • 150g unsalted butter, room temperature
    • 375g plain flour
    • 1 tablespoon baking powder
    • 375ml milk
    • 100g chopped walnuts
    • 50g hazelnuts
    • 50g almonds
    • 50g raisins
    • 50g dried apricots
    • 100g mixed peel
    • For the icing
    • 1 egg white
    • 300g icing sugar
    • 1 tablespoon lime juice
    • mint leaves, glace cherries and walnuts for decoration

    1. Beat the egg whites till they form stiff peaks.
    2. Beat butter and sugar until creamy and pale, then add the yolks and continue beating.
    3. Slowly add the flour, baking powder and milk. Fold in the egg whites, the nuts and fruits.
    4. Pour cake mixture into a buttered and floured 25cm cake tin or ring tin and bake it on a medium oven 180 C / Gas 4 until done – about 30 minutes. Check with a skewer to see if its done. Let cool slightly then remove to a cake rack to cool completely.
    5. To make the icing, beat the egg white with a tablespoon of the icing sugar. When it’s creamy, slowly add the lime juice and the remaining sugar.
    6. Pour the icing over the cooled cake and decorate with nuts, cherries and mint leaves.
