Lindt chocolate cheesecake

    This is a Swiss chocolate cheesecake that is asked for by my family and friends constantly! It is very rich and creamy and is SO simple to make with no baking required.

    Serves: 8 

    • 150g (5 oz) malt biscuits
    • 45g (1 1/2 oz) butter
    • 3 tablespoons maple syrup
    • 120ml cream for whipping
    • 200g cream cheese
    • 200g Lindt milk chocolate (Swiss chocolate)

    Prep:1hr  ›  Extra time:1hr chilling  ›  Ready in:2hr 

    1. Crush biscuits until the consistancy of bread crumbs. Melt butter and add the maple syrup to melted butter. Combine butter mixture and biscuits then push into a 17cm tin to form the base. Refrigerate.
    2. Melt chocolate and set aside to cool.
    3. Whip cream with a hand mixer until soft peaks begin to form. Fold in cooled chocolate until well combined. Set this aside.
    4. In a new bowl beat cream cheese until it is a smooth consistancy.
    5. Combine cream cheese and chocolate cream mixture together, folding it gently until well combined.
    6. Take base out of fridge and pour mixture over the top. Refrigerate for approximately 40 minutes until the mixture has set.
    7. Enjoy.

    Serving suggestion

    Shave chocolate over the top and dust with a little icing sugar or chocolate powder for presentation.

    I really enjoyed this cheesecake and it was so easy to make- however next time I would take out the maple syrup, I found it overpowered the taste of the chocolate. Will be making again!  -  13 Oct 2011

    A little of this goes a long way, so rich and creamy you only need a small slice. I made the recipe exactly as stated. Mine did not look as glossy and chocolatey as the photo suggests as once you added the cream and cheese it went quite light coloured which did dissapoint me. Chocolate lovers will love this recipe. It is easy to make, makes in advance and i would recommend it. It only makes a small cheesecake but i feel would feed six people  -  14 Mar 2010
