Beautiful pancakes

    These light crispy pancakes are delicious and easy to make. you can have any topping you like and they go down well with kids. This is my mum's recipe and she has taught me well!

    Makes: 2 to 4 pancakes

    • 60g (2 oz) plain flour
    • 1 egg
    • 2 tablespoons water
    • 2 tablespoons milk
    • 1 tiny pinch salt

    Prep:5min  ›  Cook:10min  ›  Extra time:2min  ›  Ready in:17min 

    1. Put the flour in a bowl and add an egg, mix together.
    2. Pour in the milk and water, mix together. Add a tiny pinch of salt and mix in.
    3. Put a small drizzle of cooking oil in a pan and get it hot. Pour in your mixture, about 3 tablespoons at a time for a 20cm pan. Tilt the pan to move the mixture around the pan. When the top has bubbles and the edges become dry, flip. Cook on the other side for just under a minute. Repeat with remaining batter.

    Serving suggestion

    You can also add your preferred ingredients on top such as a squeeze lemon, orange or lime, or a sprinkle of sugar. For me it must be smeared with golden syrup!

    Have just come across this recipe and its how I make my own, its by far the best for me ! nice and simple and you can make extra thin pancakes, even crispy if you like ! note: most recipes have too much milk and too many eggs. (great if you like thick stodgy pancakes)  -  15 Feb 2015
