Simple banana pancakes

    You've heard of using up your ripe bananas to make banana bread but don't forget they are perfect for pancakes, too!

    Serves: 6 

    • 125g plain flour
    • 1 tablespoon caster sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1 egg, beaten
    • 225ml milk
    • 2 tablespoons vegetable oil
    • 2 ripe bananas, mashed

    Prep:5min  ›  Cook:10min  ›  Extra time:15min  ›  Ready in:30min 

    1. Combine flour, caster sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
    2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
    3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 4 tablespoons (60ml) for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

    No-one in my family keen I'm afraid. Found them gloppy even after trying to cook them for longer and then on a higher heat. Think the banana/pancake combination didn't work from a consistency aspect. Plus, even though I don't have a particularly sweet tooth, I found I felt it needed more sugar to compensate for lack of flavour.  -  25 May 2014

    Lovely, got thumbs up from 2 of my 3 kids (number 3 is almost impossible to please tho). Would recommend spreading the batter fairly thin as the first couple I did rose well but were a bit undercooked in the middle, thinner ones were gorgeous :-)  -  05 Jan 2014
