Mascarpone and Lime Cheesecake

    Makes: 1 small cheesecake

    • 100g digestive biscuits, crushed
    • 25g butter, melted
    • 250g tub Mascarpone cheese
    • 20g icing sugar
    • 1 lime, zested and juiced
    • 1 kiwi fruit, peeled and sliced

    1. Melt the butter then stir in the crushed biscuits. Press into the base of a small flan case.
    2. Place the Mascarpone cheese, icing sugar, lime zest and juice into a mixing bowl and beat well together. Spread over the biscuit base and chill for at least 30 minutes.
    3. Remove the cheesecake from the fridge and decorate with kiwi slices.


    Instead of using a lime you can use an orange or lemon. You can also use ginger biscuits for the base.

    Great recipe. I added extra sugar as it was a bit to sharp for my taste. Used chocolate digestives and chocolate chip cookies for the base. Yummy!  -  29 Aug 2014
