Barbecued Coriander Salmon

    Summer was made for salmon on the barbecue! This gorgeous salmon marinade combines the fresh flavours of honey, lime, garlic and loads of coriander.

    Serves: 6 

    • 1 bunch coriander leaves, chopped
    • 2 cloves garlic, chopped
    • 400g (15 oz) honey
    • juice of one lime
    • 4 salmon steaks
    • salt and freshly ground black pepper to taste

    1. In a small saucepan over medium-low heat, stir together coriander, garlic, honey and lime juice. Heat until the honey is easily stirred, about 5 minutes. Remove from heat, and let cool slightly.
    2. Place salmon steaks in a baking dish, and season with salt and pepper. Pour marinade over salmon, cover, and refrigerate 10 minutes.
    3. Preheat barbecue for medium high heat.
    4. Lightly oil barbecue's cooking grate. Cook for 5 to 8 minutes on each side, or until fish is easily flaked with a fork.

    Something else. I added a little bit of chilli to give it a sweet bite with the honey. I also used the oven baked the tuna for 25mins in an oven tin with the marinade and covered with foil.  -  09 Jul 2009
