    Makes: 12 muffins

    • 225g (8 oz) flour
    • 60g (2 oz) cocoa powder
    • 1 tablespoon baking powder
    • 1 pinch salt
    • 110g (4 oz) caster sugar
    • 100g (3 3/4 oz) white chocolate chips
    • 60g (2 oz) mini marshmallows
    • 1 egg
    • 250ml (9 fl oz) milk
    • 6 tablespoons cooking oil

    1. Sift flour, cocoa, baking powder and salt into a large mixing bowl.
    2. Stir in sugar, chocolate chips and marshmallows.
    3. Beat egg in bowl.
    4. Pour milk into jug adding cooking oil and egg; hand whisk.
    5. Make a well in the centre of dry ingredients and pour all the liquid in, combine but do not over-mix. Spoon into muffins tins and bake at 200 C / Gas 6 for 25 mins.


    Eat when warm for maximum chocolaty goodness.

    Huge hit with my Rock Road additced boyfriend! I found that small marshmallows melted too much. And 25 mins was too long. More like 18mins for really moist, squidgy ones!(Thats what we all want!)  -  09 Jun 2010


    Used different ingredients. i didnt have any marshmallows so used raisins and half white and half milk chocolate chips.  -  20 Apr 2010


    Extremely easy to make but will cook the next batch at 180 degrees (like i do savoury muffins) as they came out a bit dry. Will definately try again  -  20 Apr 2010
