About this recipe: Marinated pork with a sauce of peaches.

  • 500g pork ribs or pork pieces
  • 2 tablespoons soy sauce
  • 1 dessertspoon sherry
  • juice of 1 lemon
  • 1 tablespoon oil
  • 1 teaspoon mixed herbs
  • salt and pepper to taste
  • 1 green pepper, sliced
  • 1 onion, chopped
  • 110g mushrooms, sliced
  • 1 dessertspoon cornflour
  • 30g (1 oz) gutter
  • 1 tin peaches
  • toasted nuts (optional)

  1. Mix together soy sauce, sherry, lemon, oil, herbs, salt and pepper and pour over pork. Chill overnight in fridge
  2. Remove pork from marinade, brush with oil and roast in oven for approx 30 minutes.
  3. Fry pepper, onion and mushrooms in butter and tablespoon of oil. Drain juice from peaches and mix with marinade. Blend in cornflour and add to fried mixture in pan. Add the peaches and heat through.
  4. Pour sauce mixture over pork and sprinkle with optional nuts. If using pork pieces serve with rice.
