About this recipe:This is such an easy tomato sauce to make and it freezes well too. Everyone that has tasted this has been totally in love with it and say it's better than any shop bought stuff. It's lovely with spaghetti or any kind of pasta. Added to your Bolognese sauce is gorgeous. You won't regret trying this and there are lots of different things to add. It's a cheap midweek meal and gorgeous.
2 rashers streaky bacon (or any you have; optional)
20 cheap black olives, halved (optional)
1 tablespoon dried mixed herbs (or fresh)
pepper to taste

In a frying pan fry the bacon until crisp and cut into small pieces.
In another pan add oil and gently fry crushed garlic. Add the tomatoes and tomato puree and stir. Add pepper to taste and mixed herbs. I find this recipe does not need any salt as it comes from the bacon.
Add the bacon and the olives. I find that if I crush the olives in half with my hand it gives it a more of a rustic look. The olives should be added last as they can taste quite bitter if added too early.
There are lots of other things you can add to this dish and I do when I have them in the store cupboard but i just wanted to show you a very cheap recipe. Enjoy!
If you are planning on freezing this then I would not add the olives, not that it makes much of a difference, it's just that I think the olives are tastier when added fresh.
Grate some cheese to go over this dish... perfect.
