Serves: 4

  • 8 sausages
  • 1 clove garlic, chopped
  • 4 large carrots
  • 4 large parsnips
  • 1 good sized turnip
  • 1 (400g) tin chopped tomatoes
  • 2 beef stock cubes
  • Worcester sauce, to taste
  • 4 large potatoes
  • 1 tablespoon butter
  • salt and pepper to taste

Prep:30min  ›  Cook:2hr  ›  Ready in:2hr30min

  1. Lightly fry sausages in a little oil or fry-light with the chopped garlic until brown.
  2. Whilst sausages are browning, peel and chop carrots, parsnips and turnip into medium chunky pieces and put inside slow cooker.
  3. Remove sausages from frying pan with garlic and add to slow cooker when browned.
  4. Pour the chopped tomatoes into the slow cooker and stir. Add enough water to cover the vegetables and sausages then crumble in the stock cubes and add a couple of dashes of Worcester sauce.
  5. Stir again and turn on medium-high for about 2 hours, or until sausages and vegetables are cooked to individual liking.
  6. Boil the potatoes when the casserole is just over halfway cooked. When boiled mash the potatoes with the tablespoon of butter and season to taste.
  7. When the mash and the casserole is done simply serve and enjoy.

This is great with dumplings and makes the meal even better.
