Thickly slice the potatoes, no need to peel them. Add to a pan of salted water and parboil for at least six minutes. Drain.
Chop the onion and bacon and crush the garlic clove.
Heat the oil in a large pan and gently fry the garlic and rosemary, for a couple of minutes, before adding the onion and potatoes. Fry for about 6-8 minutes until potato is starting to brown
Add the bacon and fry until it starts to crisp up, about 5-6 mins.
Make a well in the centre of the pan and crack in two eggs. Put a lid on pan and turn down heat. Cook until eggs are done to your liking. Divide between two plates and serve with baked beans and crusty bread.
