Pan Fry Bacon and Potatoes

    Easy to cook dish that's quick and delicious. Cooked in one big pan it saves on the washing up too.

    • 500g new or charlotte potatoes
    • 250g bacon
    • 1 onion
    • 2 eggs
    • 1 tablespoon olive oil
    • 1 teaspoon dried rosemary
    • 1 clove garlic
    • 1 tablespoon sweet chilli sauce

    1. Thickly slice the potatoes, no need to peel them. Add to a pan of salted water and parboil for at least six minutes. Drain.
    2. Chop the onion and bacon and crush the garlic clove.
    3. Heat the oil in a large pan and gently fry the garlic and rosemary, for a couple of minutes, before adding the onion and potatoes. Fry for about 6-8 minutes until potato is starting to brown
    4. Add the bacon and fry until it starts to crisp up, about 5-6 mins.
    5. Make a well in the centre of the pan and crack in two eggs. Put a lid on pan and turn down heat. Cook until eggs are done to your liking. Divide between two plates and serve with baked beans and crusty bread.
