Baked breaded chicken breasts

    This is an amazingly easy chicken recipe. Don't be put off by the mayonnaise - it works a treat for getting the breadcrumbs to stick to the chicken.

    Serves: 4 

    • 4 chicken breast fillets
    • 8 tablespoons mayonnaise
    • 225g fresh breadcrumbs, seasoned with salt, pepper and dried herbs

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat the oven to 220 C / Gas 7. Grease a shallow baking dish.
    2. Coat chicken breasts on all sides with mayonnaise, and roll in breadcrumbs until coated. Place coated breasts into the prepared dish.
    3. Bake uncovered for 30 minutes in the preheated oven, or until chicken is cooked through.

    this was really easy and very tasty, went down well will all and will def be making it again. In the breadcrumbs i mixed in some chopped rosemary and lemon juice fab  -  31 May 2010

    My son and I are the only ones in our family that eat chicken, so we don't get to eat it very often. When we do, I try to make something different each time. This recipe has got to be in our top ten, it is lovely. The breadcrumbs are crunchy, and the chicken is moist and tender. Please try it.  -  09 Feb 2015
