280g plain flour
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
110g unsalted butter, softened
100g caster sugar
110g dark brown soft sugar
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons almond extract
150g dried cherries
90g chopped walnuts
60g chopped pecans
340g chocolate chips or buttons

Preheat oven to 190 C / Gas 5. Grease baking trays. Whisk together the flour, bicarb and salt; set aside.
Beat the unsalted butter, margarine, caster sugar and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time; beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the cherries, walnuts, pecans and chocolate chips, mixing just enough to evenly combine. Drop by rounded spoonfuls onto the prepared baking trays.
Bake in the preheated oven until browned around the edges, 11 to 13 minutes. Cool on trays for 2 minutes; remove cookies to a wire rack to cool completely.
You can also use chopped plain chocolate instead of chocolate chips or buttons.
