About this recipe: Lots of coconut makes these cookies chewy and delicious.

Serves: 36 

  • 150g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 110g butter
  • 110g soft brown sugar
  • 100g caster sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 100g desiccated coconut

Prep:30min  ›  Cook:10min  ›  Ready in:40min 

  1. Preheat oven to 180 C / Gas 4. Combine the flour, bicarb and salt; set aside.
  2. In a medium bowl, cream the butter, brown sugar and caster sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased baking tray. Cookies should be about 7cm apart.
  3. Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

These biscuits are absolutely gorgeous and ever so yummy. Incredibly easy to knock up. These are slightly thinner than regular cookies which makes them even better and aren't as heavy as normal cookies (Choc chip).
